Thermomix® : How to make Gingerbread People Cookies for Christmas!

Going to be home this Christmas and school holidays? Get your Gingerbread man and Christmas theme cookie moulds ready for some cook and bond fun with the kids.
Use your Thermomix® to make some quick cookie dough be it regular cookies or gingerbread flavoured ones. Mix the icing and let the kids go wild with creativity to dress up their Gingerbread People cookies!

Cookie Dough Ingredients

  • 380g flour
  • 1/2 TBSP ground ginger
  • 1/2 tsp mixed spice
  • 1 tsp bicarbonate soda
  • 100g brown sugar
  • 130g butter
  • 130g golden syrup
  • 1 egg yolk
  • Pinch of salt

Icing Decoration

  • 1 egg white
  • 200g icing sugar
  • Gel food colourings in red, green, blue etc (optional)

Directions

  1. Place the cookie dough ingredients into the mixing bowl and mix 12sec speed 6
  2. Continue to work on the dough and knead for 50 sec
  3. Remove the dough and place onto a lightly floured baking mat or cling wrap and place in the fridge for at least 30 minutes
  4. Preheat oven to 180 degree (reduce 10 degree for fan forced oven)
  5. Remove the chilled dough from the fridge and roll with a rolling pin until it is about half cm thick
  6. Use the cookie cutter to shape into desired shapes
  7. Place onto a lined baking tray and bake for around 10 minutes or until brown
  8. Cool on a cooling rack
  9. Mix the icing decoration 15sec/speed 3
  10. Pipe the icing mixture using a piping bag on cooled cookies to decorate (place the icing mixture into different bags if you are mixing colours)
