Are you cooking small portion meals? Here’s a tasty one person meal (lunchbox) recipe.
Ingredients (per person portion*)
- 4 chicken wings (marinate overnight)
- 1 TBSP chicken stock
- 1 tsp sesame oil
- 1 tsp ginger juice or 5g ginger minced speed 7
- 1/2 tsp chinese cooking wine (eg. shao xing or rice wine)
- 3-4 dried shitake mushrooms
- 70g rice
- 80g kai lan or pak choy (or any other leafy vegetables)
- 700g water
- 1/2 tsp sea salt
- 1 tsp soy sauce
- chopped spring onion
Directions
- Marinate the chicken overnight in the chiller of the fridge with the stock, sesame oil, ginger, wine mixture
- Wash and soak the mushrooms
- Weigh the rice using the simmering basket in the mixing bowl, and rinse under running water until the water runs clear
- Add water, insert the basket with the rice, top the varoma with the chicken mixture and mushrooms in a steaming dish (stainless steel for better heat conductivity) placed into the varoma dish
- Steam 18min / varoma / speed 4
- Remove the rice and chicken set aside
- Add the vegetables and salt and stir fry 4 min / 100 degree / reverse / stir speed
- Use a fork to fluff the rice
- Serve with chicken, mushroom and vegetables over rice
*Tip : you may multiple if you are cooking for more people, however, watch the water level and cooking time once you add more ingredients into the varoma and simmering basket
Tip 2 : As a general rule of thumb, its 50-70g of rice per person
