Yoghurt Parfait, Quinoa and Apple Crumble
Ingredients
Crumble
- 50 g hazelnuts
- 30 g plain flour
- 80 g oat flakes
- 50 g dark brown sugar
- 40 g coconut oil
Quinoa
- 80 g quinoa
- 450 g water
- 1 cinnamon stick
- 1 lemon, thin peelings of skin only
- 1 tsp dark brown sugar
- 1 pinch fine sea salt
Compote
- 400 g apples, peeled, cored, cut in pieces (2 cm)
- 50 g sugar
- 1 pinch ground cinnamon
Assembly
- 480 g Greek yoghurt
Preparation
Crumble
- Preheat oven to 200°C.
- Place all crumble ingredients in mixing bowl and grind 4 sec/speed 5. Transfer to a baking tray and bake for 12 minutes (200°C). Set aside to cool.
Quinoa
- Place all quinoa ingredients in mixing bowl and cook 15 min/100°C//speed . Strain mixture through simmering basket, then transfer to a bowl and set aside. Clean mixing bowl.
Compote
- Place apples, sugar and cinnamon in mixing bowl then cook 7 min/120°C//speed . Transfer to a bowl and allow to cool.
Assembly
- Once cool, divide mixture between 4 serving glasses, layering yoghurt first, followed by cooked quinoa, compote then crumble. Set aside in fridge until ready to serve.
