Steam cooking is one of the healthiest way to cook seafood as it does not dry out the delicate flesh and preserves more nutrients than high heat cooking. Try steaming with your Thermomix varoma and you will be surprise with the texture and natural sweetness of food that is not overly seasoned with commercial seasonings.
Ingredients (4 person portion)
- 15g sesame oil
- 1/4 tsp salt
- 30g washed garlic with skin on
- 250g fresh prawns, slit and de-veined
- 20g soy sauce
- 500g water (boiling)
- 10g chopped spring onion
- 2 tsp shao xing cooking wine
- 120g vermicilli (~300g after being soaked and drained)
Directions
- Chopped the garlic <5 sec, speed 5, reverse>
- Add chopped garlic into the mixture of salt, soy, wine, sesame oil and spring onion
- Place a steam plate inside the varoma dish, add vermicilli, prawns
- Pour garlic seasoning mixture over the prawns
- Place the varoma dish with the steam plate of prawn and seasoning mixture onto the lid of the mixture bowl (be careful of the steam coming out of the lid hole)
- Steam <15min, Varoma, speed 1>
- Serve hot
