This is a base recipe for Asian sweet buns. Get creative and include cheeses, sausages, tuna, red bean paste etc. This is a recipe attempted by many of our new owners and they have not looked back since ????
Ingredients (For 12 portions)
- 125g fresh milk
- 25g sugar
- 1 tsp dry yeast
- Egg yolks 60g
- 250g high protein flour
- 10g milk powder
- 30g butter soften at room temperature (or olive oil)
- Pinch of salt
Directions
- Grease your baking tray and set aside
- Place fresh milk, sugar, yeast and egg yolks into the mixing bowl, mix 1 min 30 sec /37°/speed 2
- Add flour, milk powder, butter and salt, mix 30sec/speed 6
- Once completed knead 3min
- Transfer the dough into a large bowl, cover with a damp towel and let it rise at a warm place until it doubles in size (approx 45min to 1 hour)
- Divide the dough into 12 portions (approx 40g each) form balls, wrap any ingredients inside the ball and place them on the previously prepared greased baking tray
- Cover with the damp towel again and them rise until double in size again (approx 45min – 1hour)
- Preheat the oven to 170° during the last 10 minutes of rising
- Egg wash the surface of the buns with a brush before placing the tray into the oven
- Bake for 15-20 minutes or until golden brown colour
- Remove from the tray and allow to cool on a cooking rack betore serving
