紫薯面包

紫薯面包

  • 面团:
  • 250g 高筋面粉
  • 150g 水
  • 50g 紫薯泥
  • 干酵母 1茶匙
  • 30g 糖
  • 20g紫薯粉
  • 半茶匙 盐
  • 25g 牛油
  • 1.主锅加入水,紫薯泥,酵母,糖 1.30分钟 37 sp2
  • 2.加入面粉,紫薯粉和盐 揉面2分钟,加入牛油 再揉面2分钟
  • 包好放置一旁发酵 1小时或双倍大

内馅

200g 熟紫薯

30g 炼乳

100g 马苏里拉芝士

紫薯粉 适量(装饰)

1.主锅加入紫薯和炼乳 20秒 sp3

2.加入芝士 5秒 sp3 取出分成 8份

3.将醒发好的面团分成八等份滚圆休面10分钟

4.将面团擀成长方形,包入馅料整形成紫薯的造型,放在紫薯粉上滚一圈,用筷子戳几个洞当成芽点,静置发酵40分钟或双倍大,烤箱预热160度 放入面包160度 烤20分钟

Purple Sweet Potato Bun

  • Dough:
  • 150g water
  • 50g purple sweet potato paste
  • 1 tsp dried yeast
  • 30g sugar
  • 250g high protein flour
  • 20g purple sweet potato powder
  • 1/2 tsp salt
  • 25g butter
  • Preparation:
  • 1. Place water, purple sweet potato paste, yeast and sugar in mixing bowl, mix 1 min 30 sec /37°C/speed 2.
  • 2. Add flour, purple sweet potato powder and salt, knead for 2 minutes.
  • 3. Add butter and knead for another 2 minutes.
  • 4. Cover the dough and let it proof for 1 hour or until it doubles in size.

Fillings:

200g cooked purple sweet potatoes

30g condensed milk

100g mozzarella cheese

A suitable amount of purple sweet potato powder (for decoration)

Preparation:

1. Preheat oven to 160°C. Place the cooked purple sweet potato and condensed milk in mixing bowl, mix 20 sec/speed 3.

2. Add mozzarella cheese, mix 5 sec/speed 3.

3. Divide the mixture into 8 portions.

4. Divide the proofed dough into 8 equal portions and shape them into balls. Let them rest for 10 minutes.

5. Roll the dough into rectangles, wrap the fillings inside, and shape it to resemble a purple sweet potato.

6. Coat the shaped dough with purple sweet potato powder, poke a few holes with chopsticks to simulate sprouts, and let it proof for 40 minutes or until it doubles in size.

7. Bake the bun at 160°C for 20 minutes.
