Each ingredient has an auspicious meaning and greetings signifying luck and prosperity are using shouted as the diners toss the ingredients.

Recipe for YU SHENG | YEE SANG using Thermomix®
INGREDIENTS
- 100 g plum sauce
- 30 g honey
- 300 g radish, peeled and trimmed
- 200 g carrots, peeled and trimmed
- 150 g pear, peeled, cored, cut into quarters
- 150 g purple cabbage, cut in wedges that fit through feeder tube
- 100 g jackfruit, shredded
- 100 g pomelo, peeled
- 150 g sashimi grade salmon, sliced
- 4-5pcs mandarin oranges
- 2 black olives
- 2 cherry tomatoes
- 10 abalones, canned in clear brine
- 50 g fried wantan skin
- 150 g crushed peanuts
- 50 g oil
PREPARATION
- Place a bowl on mixing bowl lid, measure plum sauce and honey. Mix well and set aside.
- Insert Thermomix® Cutter shaft and basket then insert cutting disc with side 2 (grating) facing up. Place cutter lid into position and insert radish in wide part of feeder. Insert pusher and start Grating /Thin. Repeat until all radish are grated. Transfer grated radish into a separate bowl and set aside.
- Place cutter basket and disc back on shaft with side 2 (grating) facing up. Place cutter lid into position and insert carrots in wide part of feeder. Insert pusher and start Grating /Thin. Repeat until all carrots are grated. Transfer grated carrots into a separate bowl and set aside.
- Place cutter basket and disc back on shaft with side 2 (grating) facing up. Place cutter lid into position and insert pear in wide part of feeder. Insert pusher and start Grating /Thick. Repeat until all pears are grated. Transfer grated pear into a separate bowl and set aside.
- Place cutter basket and disc back on shaft with side 1 (slicing) facing up. Place cutter lid into position and insert purple cabbage in wide part of feeder. Insert pusher and Slicing /Thick. Repeat until all cabbages are grated. Transfer sliced cabbage into a separate bowl and set aside. Remove Thermomix Cutter and shaft.
- In a big plate, arrange grated radish, carrots, pear, sliced cabbages, jackfruit, pomelo, salmon, mandarin oranges, olives, tomatoes, abalones, fried wantan skin and crush peanuts into desired design.
- Drizzle oil and reserved plum sauce mixture, toss and serve immediately
