Here’s our favourite chocolate chips cookies that taste crunchy like store-bought ones. 😉
Sprinkle some sea salt to enhance the chocolate flavour. This recipe produces super crunchy cookies that will be impossible to stop once you start popping them into your mouth! It’s very quick and easy to mix these with your Thermomix®.
Crunchy Chocolate Chip recipe
Ingredients
250g butter
240g brown sugar
310g plain flour
60g corn flour
1 tsp vanilla extract
1 tsp baking powder
1 tsp baking soda
1 TBSP instant coffee granules (optional for additional flavour)
6 TBSP vegetable oil
1 egg
340g chocolate chips (to be added last)
Optional for flavour (added last with chocolate chips)
50g dried cranberries or raisins
50g nuts (eg. walnut, almond)
50g Almond nibs
Garnishing (optional)
Sea salt (sprinkle prior to baking for taste)
Directions
1. Add butter, brown sugar, vanilla, egg and mix 1min/speed 3
2. Scrape down, add flour, baking soda, baking powder, oil, coffee granule (optional) and mix 40 sec/speed 4
3. Scrape down, add chocolate chips and any other ingredients, mix 30 sec/reverse/speed 2
4. Refrigerate the content for 30min
5. Preheat oven to 180°C. Line two baking trays with baking paper and set aside
6. Scoop out 1 teaspoon size dough and space them on the baking tray
7. Bake 20min or until the cookies turn golden brown and store in airtight containers once they cooled
Tips
1. Refrigerating the dough prior to baking reduces the cookie from spreading
2. Adjust oven temperature accordingly as all ovens are different
3. Reduce temperature by 10-20c for fan forced oven
