Make your own Quiches using Thermomix®!


It is a French tart consisting of pastry crust filled with savoury custard and pieces of cheese, meat, seafood or vegetables. You can try all sorts of fillings to suit your preference.
The flaky crust and flavourful fillings make it simply delightful for sharing with family and friends. What’s best is it can be served as a hot or cold treat!

Quiche Lorraine

Ingredients

  • 50 g Gruyère cheese, cut in pieces (2 cm) (optional)

Pastry

  • 150 g plain flour
  • 75 g unsalted butter, chilled, diced
  • ½ tsp salt
  • 50 g water

Filling

  • 200 g bacon cubes
  • 4 eggs
  • 50 g milk
  • 100 g crème fraîche or 100 g fresh cream
  • ¼ tsp salt
  • 2 pinches ground black pepper

Preparation

  1. Place Gruyère cheese in mixing bowl, grate 10 sec/speed 7. Transfer to a bowl and set aside.

Pastry

  1. Preheat oven to 180°C. Grease and flour a quiche tin (Ø 26 cm).
  2. Place flour, butter, salt and water in mixing bowl, mix 20 sec/speed 4. Transfer out and shape into a ball.
  3. Using a rolling pin, roll out pastry on a lightly-floured surface. Line prepared quiche tin with pastry, prick base with a fork then set aside.

Filling

  1. Place bacon cubes in mixing bowl, sauté 3 min/120°C/Spoon speed. Drain bacon through simmering basket and discard fat. Set bacon aside.
  2. Place eggs, milk, crème fraîche, salt and pepper in mixing bowl, mix 30 sec/speed 4.
  3. Distribute reserved sautéed bacon cubes over pastry and cover with egg mixture. Sprinkle with reserved grated Gruyère cheese and bake for 25 minutes (180°C) or until golden. Serve warm or cold.
