Lydia Foong was diagnosed with stage 2B Triple Negative Breast Cancer, a more aggressive form of Breast Cancer, after discovering a lump in her breast during a self-examination. Thanks to early detection, she was able to undergo treatment and a mastectomy to remove the cancer cells.

However, during her treatment, Lydia experienced side effects that made it difficult to eat and cook. To help her during this time, she relied on her Thermomix®. The Thermomix® was especially helpful when she was too tired to cook and needed to prepare nutritious meals. Even while resting, Lydia was able to put the Thermomix® to work and ensure that she had healthy meals during her recovery. 💚

🥦Potato and Broccoli Soup

Potato & Broccoli Soup🥔

Ingredients

30g Butter

1 Onion, chopped

2 cloves of garlic, chopped

225g Broccoli, stem diced, top cut into florets

340g approx 4 russet potatoes, peeled and cut into small chunks

350g chicken stock

350g water (may substitute with fresh milk)

Salt and pepper for taste

Method

  1. Remove the skin of the garlic, 5sec / speed 5 / reverse
  2. Remove the skin, add in the onion, chop 5sec/ speed 5
  3. Add butter, saute for 4min / 100c / speed 1
  4. Add in the broccoli, potatoes, chicken stock and water and cook 12min / 100c / speed 1
  5. Blend the soup 1min/speed 10 or until smooth or your desired consistency
  6. Add salt and pepper for taste

Steamed tofu with minced chicken 🐔
Ingredients
150g minced chicken
½ tsp salt
1 ½ TBSP corn starch mixed into ½ TBSP cold water
1 pack silken tofu
3 dried shiitake mushrooms (remove the stems) soaked in warm water
Keep 120g of the mushroom soaking liquid
20g cooking oil
1 clove of garlic
½ tsp salt
2 TBSP oyster sauce (optional)
Coriander for garnishing (optional)
Method

  1. Marinate the minced meat with 1tsp corn starch and ½ tsp salt. Set aside
  2. Add garlic into the mixing bowl remove the skin with 5sec /speed 5 / reverse
  3. Remove the skin and add mushroom to chop at 5 sec/ speed 5
  4. Add oil, cook at 120c / 3min / speed 1
  5. Add the minced meat and seasonings into the bowl and continue to cook at 120c / 5min / speed 1
  6. Add in the mushroom soaking liquid and continue to cook at 3min/120c / speed1
  7. Place the tofu slices into a steaming plate, steam for 10min
  8. Spoon the meat mixture and sauce over the steamed tofu, garnish with coriander and serve hot

Almond cream🥣
Ingredients
110g South Chinese almond (sweet almond)
10g North Chinese almond (bitter almond)
40g white rice (raw)
40g rock sugar (optional and adjust according to taste)
600g water
Method

  1. Soak the almonds and rice in warm water for min 1 hour. Drain and set aside
  2. Place the soaked and drained almond and rice with 300g of water into the mixing bowl to blend 2min / speed 8
  3. Add 300g of water to blend for another 1min / speed 8
  4. Strain the almond milk through a nut bag
  5. Pour the almond milk into the mixing bowl, add sugar and cook 15min / 98c / speed 2

Strawberry Smoothie🍓
Ingredients
115g fresh strawberries
2 frozen bananas
100g fresh milk
1 packet whey protein
Method

  1. Place all ingredients into the mixing bowl
  2. Blend 15sec /speed 5
