Thermomix® Homemade Food gifts : madeleines & piped butter cookies

Scrumptious pastries like Madeleines and piped butter cookies (also known as German cookies or Hong Kong style Jenny’s Cookies) are expensive when store bought but actually very easy to make from scratch with our Thermomix® following these simply recipes and instructions.

Thermomix® piped butter cookies

Piped butter cookies:

Ingredients:

  • 125g Unsalted Paysan Breton French butter*
  • 1/4 tsp Seasalt (omit if using salted butter)
  • 40g Icing sugar
  • 125g Potato starch
  • 80g Prima Top Flour*
  • 15g Cowhead milk
  • 1/2 tsp vanilla extract (optional)
  • Tools needed: Pipping bags, Wilton 2D pipping shell

Preparation:

  1. Preheat oven at 160°C
  2. Add the butter, seasalt, icing sugar into the mixing bowl and mix for 1min/ speed 4.
  3. Add in the potato starch, Prima top flour and cowhead milk into the mixture. You may add in 1/2 tsp vanilla extract as well. Mix 10sec/speed 4.
  4. Transfer to pipping bag and pipe your desired characters.
  5. Bake in oven at 150-160°C(depending on your oven) for 35minutes.

Tips

  1. If Top Flour is unavailable, use Plain Flour/All Purpose Flour instead.
  2. Make sure that the butter is kept on the counter for several hours till soft to touch before creaming it in Step 2 above.
  3. Omit salt if using salted butter
  4. Use French butter for authentic taste!

Madeleines

120gm sugar

  • 2 lemon zest
  • 150gm + 20gm(brushing) salted butter(room temp)
  • 20gm honey
  • 150gm self raising flour
  • 165gm eggs (3eggs+ 1 yolk)
  • 2 gm of vanilla bean paste

Preparation

  1. Place sugar n lemonzest in mixing bowl. Pulverise for 10sec / Sp10. Transfer it to a clean bowl and set it aside for later
  2. No need to rinse the bowl. Put butter & honey in mixing bowl and mix 4min / 50c / Sp2
  3. Remove 20gm melted butter to grease n dust with flour n remember to flip out excess flour.
  4. Preheat oven 180c for 15min
  5. Add flour, eggs, reserved lemon sugar & vanilla bean paste. Mix 1min / Sp4
  6. Transfer out n put in freezer for 20min.
  7. Bake for 13-15min (monitor at 13m as different ovens may bake and brown differently)
  8. Transfer to a cooling rack.
  9. Optional : Replace lemon zest or brush baked madeleines with 1 tablespoon of rum or orange blossom water for a French twist. These morsels are best eaten fresh, when just fresh out from an oven. They keep well for 48 hours and lose their crispy exterior after a while.
