Thermomix® Tutorials – Bang Bang Chicken with MasterChef Louise Yuan

Bang Bang Chicken (Serves 4)

Chicken
• 4 slices of ginger
• 2 spring onions
• 250g chicken breasts (2 pieces)
• 1L water

Dressing
• 4 tbsp chicken stock (from poached chicken)
• 2 tbsp sesame paste/tahini
• 2 tbsp light soy sauce
• 1.5 tbsp chinkiang vinegar (chinese black vinegar)/balsamic vinegar
• 1.5 tbsp sesame oil
• 2 tsp sugar
• 1 tsp salt

Garnishing
• 2 large cucumbers
• 2 tbsp chopped peanuts
• Roughly chopped coriander
• 1 tbsp chili oil (optional)

[Optional]
• 250g Pasta/Noodles/Rice of your choice
• Peanuts and chili oil

Instructions
Steam Chicken

  1. Add 1L of water into mixing bowl and use the kettle mode to boil for 8-9min.
  2. After the water has boiled, place Varoma on mixing bowl
  3. Add chicken breasts, ginger and spring onions on a plate and place into Varoma. Steam for 9-20mins*/Varoma/Speed 1.

*Adjust the timing accordingly to the thickness, amount & part of the chicken. Chicken with bones will take longer to cook.

Prepare garnishing

  1. Put cutter basket into mixing bowl and insert side 2 (grating).
  2. Cut cucumber to fit in the cutter shaft and add cucumbers into the hole of cutter shaft. Turn the knob to Thick setting and grate cucumber into thick slices. (grate Speed 4/4 secs)
  3. Shred chicken with Thermomix®, tear it into smaller pieces and put into the mixing bowl.
  4. For thicker shreds (grate Speed 4/4 secs)
    For thinner shreds (grate Speed 4/7 secs)

Prepare dressing

  1. Add in chicken stock (from poached chicken) to mixing bowl
  2. Add in sesame paste, light soy sauce, sesame oil, chinkiang vinegar, peanut butter, sugar and salt
  3. Mix for Speed 3/10secs

Assemble the dish
For Salad:

  1. Scatter cucumbers at the base of the plate
  2. Add chicken shreds on top
  3. Finish with peanut sauce, coriander and chili oil drizzled on top

With Carbs:

  1. Add your preferred noodles/rice to a bowl
  2. Add cucumbers and chicken shreds on top
  3. Finish with peanut sauce, coriander and chili oil drizzled on top
